Summer 2023 Online Hours

  • Online: Monday 9:30 am to 10:30 am (zoom 9:30 to 10) , Tuesday 5:00 to 5:30 pm (I will be on zoom at this time) ,Wednesday 1:00 pm to 2:00 pm (zoom 1 to 1:30 pm). Please note that zoom times may be requested by students in advance, so please contact me if you are wanting to meet so I can make sure I am available. I am also available outside of these office hours on a "as needed basi", so please feel free to schedule at another time Mon through Thursday, and I will accommodate you as best I can. I will also be surveying you on the first discussion as to the best times to meet, so please provide that information and I may adjust these hours or add additional hours through Announcements to accommodate the majority.

About Your Instructor
NUTR 20 and 22

Welcome to NUTR 20, an introduction to Nutrition at Cabrillo or NUTR 22, Nutrition Health and Wellness. Whether you are a nutrition major, taking prerequisites for a nursing, other programs, or just interested in improving your knowledge and health, this class has valuable information for your education and personal health. Fall 2022 will be my 10th year teaching at Cabrillo, but I have been teaching for over 25 years at San Jose State and for 5 years at The College of San Mateo, in addition to being a registered dietitian (RD). I obtained my RD in 1995 and worked in a Western Medicine environment from 1995 through 2013 as a hospital dietitian. Eleven years ago I started studying integrative or functional medicine/ nutrition and this class reflects much of that information as opposed to the more traditional information found in your text book. You will have an opportunity to evaluate both sides from a science based perspective and make decisions for yourself. Studies indicate there is a 10 to 17 year gap of new science officially being incorporated into medical practice and/or guidelines or recommendations in a more traditional medical setting, so I try and provide you with the most up to date information.

In 27 years of both clinical practice and teaching, I have watched both the science and the world evolve in a somewhat concerning fashion with regards to chronic disease. I feel we are at a critically important time in the world and many people feel a lack of empowerment in their health and in the health of this planet. Currently in the U.S.:

  • One out of every 2 men and 1 out of every 3 women will develop cancer in their lifetime

  • As of 2025, one out of every 2 people will develop type 2 diabetes

  • If current trends on autism continue, 1 out of every 2 children will fall on the spectrum by 2050

Researchers estimated that 4.7 million Americans aged 65 and older had Alzheimer's in 2010, or about one new case every 68 seconds. The number will triple to around 13.8 million by 2050

My courses include aspects of my experience listed above as I integrate both Western traditional medicine along with a more holistic, integrative approach in my courses. Hypocrites was one of the first people to speak on the importance of nutrition "Let food be thy medicine and medicine be thy food" and I still believe this to be the truth.

Spring 2023 Online Hours

  • Online: Monday 8 to 9 am (zoom 8 to 8:30) (I am available most of the day Monday and Tuesday in general and frequently check email Tue through Thur very frequently), Tuesday 5 to 6 (zoom 5 to 5:30, Wed 1 to 2 pm (zoom 1:00 to 1:30p) or by appointment only on Thurs and Fridays. Office hours are generally messaging/ email, aside from the zoom hours listed above. Additional office hours can be arranged Mon through Friday by appointment, so please message me with a couple of purposed times, if you are unable to attend regular office hours. I would also like to encourage you to schedule a time with in the posted office hours to make sure you have an opportunity to talk to me directly. If you join a zoom office hour and I do not admit you, that means I am meeting with another student.
